This floodlit room overlooking the verdant lawns and whirring activity of the Tivoli Gardens outside is perfectly conducive for a good three-hour lunch. The dishes are creative yet hearty andmade with the finest ingredients. I can suggest the salted Faeroese salmon with apples, fennel and horseradish followed by a crab tart with pumpkin and sea buckthorn and then a straight forward grilled rib-eye steak with French fries, béarnaise sauce and pickled onions – guaranteed to be sublime. The rooms in Nimb are few in number so booking ahead is paramount. There are just 17 unique guest bedrooms and suites where the focus is on details. The rooms are massive in scale and designed to feel like a lived-in home – the abode of someone with very refined taste. With a Nespresso machine, Bang & Olufsen TV, wireless internet and a roaring open fire, it can be challenge to avoid having a night in as one might back at home. All around Nimb, from the rooms and corridors to the open spaces and communal areas, there is a deft a wonderful use of natural materials of the highest quality and the artworks and furniture combine to great effect. It’s a successful alliance of modern Scandinavian architecture that still preserves the original Moorish inspiration. Prior to opening in 1909, the Nimb family was already proven restaurateurs with a respected name. Decorative art exhibitions were held in the Nimb Bazaar and the house radiated creativity. By the 1920s the young and sophisticated were hanging out at Nimb and this seems not to have changed in the last 90 years. Nimb is the place to be, with the Tivoli Gardens theme park as aback garden and the best concerts from international stars happening here, it’s essentially a destination in itself. If a more low-key and edgy option is preferred then the Anderson Hotel is a smart choice. Located in the heart of the hip quarter Vesterbro, the Anderson attracts a cool crowd that enjoys a complimentary wine hour every evening. The 73 rooms and suites feature wallpaper and furnishings by the Designers Guild and a free late check out is a nice touch.
