Once, only 5-star hotels had fine dining restaurants. Over the past couple of years, hotels are also accommodating upper casual dining restaurants, targeting a young and trendy segment of the society. To date, what has been your most memorable culinary experience and why? I have many memorable meals but the one I remember most was on an island in Italy called Ischia. It was in a very small restaurant where a lady about 50-60 years old cooked for me a very traditional meal. I still remember the taste, the authentic flavour – I could feel the emotion in each dish. In terms of work experience, at BiCE Mare we hosted three Michelin star chefs frommy city of Naples – that was my biggest day ever! It was amazing to see the best chefs coming from my town, cooking for the people in Dubai and giving them the best part of our native home. I felt very proud and for sure it will be a part of my best memories. Where do you want to see yourself five years from now? I would love to see the Michelin star guide network come to Dubai, and obviously my dream is to help BiCE Mare be recognised with a Michelin star. Finally our signature question: what do you think of Simply Abu Dhabi? When I think about Simply Abu Dhabi my first feelings are luxury, elegance and class! It’s a publication about the best.
