Andrew: Wow, that’s going back a number of years now. To be honest, the sound of being a globe-trotting chef was the original inspiration. I left home at 17 to move to a larger city, and by 21 I was working in some great kitchens and getting a taste for travel. I guess I have specialised in European cuisine, but I have dabbled in Asian and South American as well. How would you describe your cooking style? Stephen: Our style is to keep the food real. We base our menu on the flavours of the greater Mediterranean, gathering inspiration from North Africa, Southern Europe and the Middle East, wrapping it all up in true London style. Keeping it simple and allowing the ingredients to speak for themselves is paramount and it is important for us that all our food, both savoury and sweet, is presented in a rustic style. We want our guests to know that the food was made fresh and with passion by a real chef. What are you like with your team in the kitchen? Andrew: Respectful. It’s really as simple as that: they all work hard for us, they follow direction and they put their hearts into their jobs. The aim is to encourage and motivate the team so we enjoy having a laugh when the time is right, but being by their side when the pressure is on.
