Dining & Culinary Dining at Aman Venice is an experience in itself, with two distinct restaurants offering a range of culinary delights. First is The Palazzo Kitchen Table—a unique dining space for private dining experiences and cooking classes. This intimate kitchen space, overlooking the private garden, allows guests to meet Aman Venice’s Executive Chef, Matteo Panfilio, for a celebration of creativity and locally sourced, sustainable ingredients. Second is Arva—Aman’s tribute to Italy’s rich culinary heritage. Its name is taken from the Latin term for ‘cultivated land’, a reflection of the kitchen’s philosophy of making the best of land and sea. Here you can choose between dining in the sumptuous Yellow Dining Room overlooking the Grand Canal or savouring a private-dining experience in one of the palazzo’s hidden rooms. The Arva menu is rooted in the “cucina semplice” tradition of rural Italy, inspired by creative cooks who concocted dishes solely from what was available in the gardens, forests and oceans surrounding them. Each day, sustainable, seasonal produce, and fresh fish and organic meats are brought from the Rialto market, the Venetian lagoon and its islands to enrich the Arva menu. I opted for a dining experience in the mind-blowing opulence of the Neo-renaissance dining room, and my charming waiter told me that “Arva” is Latin for “harvest” and that the Aman Group has an Italian restaurant named Arva in several of its hotels around the world. 180 | Simply Abu Dhabi
