Dining The Mandarin Oriental Gourmet Shop, situated at street level on Chuo Dori, offers only the finest homemade cakes, breads, sandwiches, viennoiseries, and speciality coffees. After starting his career as a baker in his hometown of Shizuoka Prefecture, head baker Chef Tomohiko Nakamura spent about 12 years honing his skills in the bakery division of Joël Robuchon in Tokyo and Taipei. Additionally, he worked as the sous chef baker at a French bakery in Wellington, New Zealand, and later served as the chef baker in Sydney, Australia. There, he played a key role in the launch of the first authentic Japanese-style bakery, contributing not only to the kitchen operations but also to the design of the kitchen. Drawing on his extensive experience at Joël Robuchon and the skills he gained in various environments, he now oversees all the bread production as the chef baker at Mandarin Oriental, Tokyo. Located on the 2nd floor and boasting a 25-metre-high ceiling, Ventaglio offers a unique dining experience filled with natural light. The iconic Benjamin tree greets guests as they enter, setting the tone for a memorable occasion. Drawing inspiration from various culinary cultures across the globe, Chef Vincent Wan offers sophisticated and authentic international cuisine with a buffet-presentation. Originally from Mauritius, Chef Vincent joined Mandarin Oriental, Tokyo in 2023 as Chef de Cuisine at Ventaglio, the hotel’s all-day dining restaurant. His global culinary experience spans numerous prestigious roles, including Executive Chef at Club Med Resorts in Mauritius from 2022-2023 and in Seychelles from 2021-2022. Vincent’s cuisine is deeply inspired by the diverse cultures and cuisines he has encountered throughout his travels. Known for his fusion cuisine, Chef Vincent combines elements from various culinary traditions, focusing on dishes that bring happiness and satisfaction to those who enjoy them. Blending traditional techniques with extensive culinary expertise, Signature honours French gastronomy by offering classic French cuisine with a contemporary twist. The restaurant’s modern décor enhances the experience, allowing guests to enjoy Chef Sylvain Gioana’s mastery, while taking in stunning city views. Elegant silver screens add to the fine-dining ambiance, creating stylish and intimate spaces bathed in soft daylight or illuminated by Tokyo’s skyline at night.
