Daniel Nuss grew up surrounded by abundant farmlands and glorious wineries, learning an appreciation of the distinctive flavours derived from farm-bred meat, organic produce and succulent fresh fruit and vegetables. It was growing up in this environment in the Alsace region in France that instilled Nuss’ infatuation with food. With his passion for creating dishes of fabulous food further awakened at an early age from seeing his beloved Grandmother cooking, it was watching her at the stove that increased his awareness of fresh ingredients. Developing a sophisticated palate whilst young, it was from his Grandmother that he gained an understanding of cooking using seasonally appropriate ingredients in order to ensure the most sumptuous flavours. He brings this flair for cooking and his appreciation of the finest ingredients to his role at St Regis where as Executive Chef he delivers a dining experience beyond culinary expectations to everyone who samples his kitchen creations. With an inspired enthusiasm and bags of talent, he works with his ingredients to produce fresh plates of stunningly presented food that can be truly savoured. His burgeoning career got off to a great start working as an apprentice at a distinguished One-Star Michelin restaurant in the Alsace region. Under the guidance of his Chef his passion for cooking was further ignited as he developed an even deeper respect for ingredients and developed techniques that helped him create truly imaginative and delicious dishes. The training was intense, but this was a budding Chef who was hungry for success and eager to discover all he could about his trade. The four years dedicated training paid off and with his degree under his belt he decided it was important to get out into the big wide world to celebrate food from around the globe and acquire new skills. Having made a deliberate effort to see the world and learn more about the traditional dishes in each country he visited, Daniel Nuss attributes his accomplishments as a Chef to his journeys around the globe. Wherever he went, there were unique opportunities to explore new cooking techniques and discover dramatically different ingredients. With his culinary horizons well and truly widened, Daniel was able to really fine tune his own distinctive cooking style. His professional experience prior to St Regis has stood him in great stead for a role directing the culinary creations produced within the kitchen of this magnificently opulent hotel. Daniel was Executive Chef at The M Resort, Las Vegas during the pre- opening and opening and at the MGMMirage, Las Vegas, where he rebranded outlets from the Mandalay Bay group to MGM and developed innovative and successful new restaurant concepts. Having travelled the world and honed his trade, Daniel returned to the UAE in 2009 as Executive Chef at The Yas Hotel, Abu Dhabi, as part of the pre-opening and launch team. Arriving at the St Regis with more than thirty years of experience gained around the globe, St Regis’ Executive Chef is also a fantastic boon for the hotel and every guest who dines there. His superb dishes are strongly influenced by his experiences of living, working, cooking and dining in gloriously exotic locations including Switzerland, Tahiti, Seychelles, Cambodia and Dubai. Delicately flavoured dishes are inspired by his travels to all these incredible destinations. An incredibly exciting addition to the St Regis Saadiyat Island Resort, this ambitious Executive Chef want to go further in his journey with food and strives to pass his passion for farm-fresh ingredients onto his 120 strong team of talented chefs. Having been fortunate enough to sample his culinary creations whilst staying at the St Regis we too feel we have benefitted from Daniel Nuss’ incredible journey around the globe. The incredible ambience created by the striking pavilions and terrace make for the ultimate romantic fine dining experience whilst a large friendly family area is perfect for parents and kids. The Manhattan Lounge creates the perfect ambient vibe for sealing a business deal or meeting up to put the world to rights with friends. We sat on the huge terrace overlooking the ocean before moving inside to the fabulous cocktail lounge with its remarkable decor of stone-panelled walls and ornately upholstered panels. A talking point for us throughout the evening was not just the delicious hearty meal we tucked into, but also the impressive life mural on the wall which tells the incredible story of the origins of Abu Dhabi’s early settlers. If like us, you’d like to indulge in that long-established and highly refined tradition of afternoon tea, the grandly opulent Drawing Room is the place to head for. During our cultured afternoon a beautiful blend of bespoke tea was served to us with the ultimate grace. Feeling refreshed, we popped into the tempting pastry shop –Sucre – on our way back to our room to pick up a couple of divine little handmade chocolate pastries. Authentic tea and gloriously sweet cakes, surely life doesn’t get much better than this! The large number of attractive restaurants and lounges on offer to guests include an Asian restaurant surrounded by water, a temptingly casual seafood restaurant directly on beach where guests benefit from truly relaxed and informal dining with the authentic island experience of sand in your toes and no dress code and the High-end 55 and 5th Grill where we spent the last evening of our stay being treated to culinary treats aplenty.
