A steakhouse built around altitude and fire
Ray’s Grill has one of the easiest elevator pitches in Abu Dhabi: a refined steakhouse on Level 63 of Conrad Abu Dhabi Etihad Towers, wrapped in panoramic views of the city and Arabian Gulf. Hilton’s current dining page describes the restaurant through sharing-style Chateaubriand, Australian Wagyu and Tomahawk cuts, while MICHELIN’s 2026 coverage adds more detail about the room itself – dark wood, black marble, leather seating and an open kitchen that gives the chargrill a sense of theatre. The restaurant is MICHELIN-selected for 2026, and food and drinks manager Ricardo Bout received the guide’s 2026 Service Award, recognition that underlines how much the experience depends on hospitality as well as expensive beef.

The view does not excuse the cooking
Skyline restaurants can sometimes rely too heavily on altitude, but Ray’s Grill has a more serious steakhouse proposition. MICHELIN describes Argentinian, Canadian and Australian Wagyu alongside fresh seafood, while Abu Dhabi’s destination guide has long highlighted the restaurant’s interest in internationally sourced cattle breeds and prime cuts. The menu is therefore best approached by choosing a cut for the table, adding seafood or vegetable sides and allowing the chargrill to remain the centre of gravity. The 360-degree setting is most dramatic after dark, when the Corniche, islands and towers become part of the room. Service is equally central: the 2026 MICHELIN award specifically recognised Ricardo Bout and the team for warm, attentive hospitality.

A current closure note changes the editorial decision
There is, however, a live status issue that cannot be ignored. Hilton’s main dining page continues to present Ray’s Grill as part of the hotel’s current restaurant collection, but Etihad Holidays currently states that Ray’s Grill is temporarily closed and scheduled to reopen on 1 September 2026. Reservation pages also show no current availability. That is sufficient conflict to place this package on hold rather than publish a misleading ‘open now’ guide. The restaurant remains important, and its 2026 MICHELIN recognition is current; the correct action is simply to reconfirm the reopening after 1 September. Once trading is verified, this should return to the live guide as one of Abu Dhabi’s defining special-occasion steakhouses.
