That cross-cultural approach is part of the identity rather than an accidental fusion. Michelin points diners towards ceviche and the Chilean sea bass rice iron pot, a signature that captures the restaurant’s preference for bold flavour and generous presentation.

The Pisco Bar changes the way the restaurant is used
COYA is as much a social venue as a dining room. Its Pisco Bar takes inspiration from old Lima bars, while the Abu Dhabi calendar is filled with music-led nights, seasonal parties and events such as Azucar. That means a reservation can move naturally from lunch into drinks, or from dinner into a livelier late-evening atmosphere. Floor-to-ceiling windows and the waterfront position at Four Seasons Hotel Abu Dhabi at Al Maryah Island prevent the interiors from feeling overly theatrical; there is always a sense of the city outside the room.

Still relevant, but not above scrutiny
Current evidence confirms COYA is operating normally, with restaurant service from noon on weekdays, a later Saturday start and closing times extending to midnight on Thursday, Friday and Saturday. Recent 2026 diner feedback is not uniformly glowing – there are specific complaints about service and billing alongside enthusiastic praise for food, cocktails and atmosphere – so Simply Abu Dhabi should avoid presenting it as infallible. What remains convincing is the clarity of the concept. Few restaurants in the capital combine a serious ceviche programme, a dedicated pisco culture, live energy and luxury-hotel surroundings so completely. COYA still earns its place because it offers a whole evening rather than merely a sequence of plates.
